Last updated: 21\/08\/2026.<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Spirits and liqueurs are both high-strength alcoholic drinks, but they are made in fundamentally different ways. <\/span><b>Spirits<\/b><span style=\"font-weight: 400;\"> are produced by <\/span><b>distillation<\/b><span style=\"font-weight: 400;\"> \u2014 physically separating alcohol from water. <\/span><b>Liqueurs<\/b><span style=\"font-weight: 400;\"> are not distilled: they are made by <\/span><b>macerating or infusing<\/b><span style=\"font-weight: 400;\"> botanicals in alcohol and then blending in sugar and flavourings. When the fermented liquid is heated, the alcohol and its aromatic compounds vaporise first; the vapour is then cooled and condensed back into a concentrated, flavoured liquid.<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">The distillation process, step by step<\/span><\/h3>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Heating: the fermented base is warmed in a still.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Evaporation: alcohol and volatile aromatic compounds turn to vapour before the water does.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Condensation: the alcohol vapour is cooled and returned to liquid form \u2014 now concentrated and aromatic.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Further distillation (if required): to refine strength and character, separating the unwanted heads and tails from the desirable heart of the run.<\/span><\/li>\n<\/ol>\n<h3><span style=\"font-weight: 400;\">Where the alcohol comes from<\/span><\/h3>\n<p><span style=\"font-weight: 400;\">In spirits, the alcohol is created by <\/span><b>fermenting<\/b><span style=\"font-weight: 400;\"> a sugar- or starch-rich raw material \u2014 grain, fruit, molasses or grapes \u2014 which is then concentrated by distillation. In liqueurs, the alcohol is usually a ready-made <\/span><b>ethyl alcohol of agricultural origin<\/b><span style=\"font-weight: 400;\">, to which sugar and flavourings are added. In other words, most liqueur producers do not distil their own base alcohol; they build the drink on a spirit that has already been distilled.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">How liqueurs are made: maceration, infusion and blending<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Liqueur production brings together alcohol, sugar, flavourings and, sometimes, colour. Plant materials \u2014 fruit, herbs, spices, roots and peels \u2014 release their aromas through <\/span><b>maceration<\/b><span style=\"font-weight: 400;\"> or <\/span><b>infusion<\/b><span style=\"font-weight: 400;\"> in direct contact with the alcohol. Once the base is blended, it is left to rest for months, or even years, before bottling.<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">Maceration and infusion: methods and timing<\/span><\/h3>\n<p><b>Maceration<\/b><span style=\"font-weight: 400;\"> means steeping botanicals in cold alcohol to draw out their aroma and character. <\/span><b>Infusion<\/b><span style=\"font-weight: 400;\"> works on the same principle but usually applies gentle heat to speed up extraction. Timing depends on the ingredient and the flavour you are after: from a few days for delicate peels and herbs to several weeks for tougher roots and spices <\/span><i><span style=\"font-weight: 400;\">[VERIFY: give specific steeping times only if backed by a source or an in-house recipe]<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">ABV and the UK rules for liqueurs<\/span><\/h3>\n<p><span style=\"font-weight: 400;\">In Great Britain, spirit drinks are governed by <\/span><b>assimilated Regulation (EC) No 110\/2008<\/b><span style=\"font-weight: 400;\"> (retained EU law after Brexit); Northern Ireland instead follows Regulation (EU) 2019\/787. Under the GB rules a <\/span><b>liqueur<\/b><span style=\"font-weight: 400;\"> must have a minimum strength of <\/span><b>15% ABV<\/b><span style=\"font-weight: 400;\"> and a minimum sugar content of <\/span><b>100 grams per litre<\/b><span style=\"font-weight: 400;\"> (lower thresholds apply to certain types, such as cherry or gentian liqueurs) <\/span><i><span style=\"font-weight: 400;\">[VERIFY exact sugar thresholds against the current assimilated Regulation before publishing]<\/span><\/i><span style=\"font-weight: 400;\">. Distilled spirits sit higher: most categories start at 37.5% ABV, with whisky at 40%.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Examples: how gin, vodka, whisky, rum and brandy are made<\/span><\/h2>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Gin<\/b><span style=\"font-weight: 400;\"> \u2014 a neutral spirit redistilled or flavoured with botanicals, in which juniper must be the predominant flavour. London Dry gin carries its own additional rules.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Vodka<\/b><span style=\"font-weight: 400;\"> \u2014 distilled from grain or potatoes and refined towards a clean, neutral character.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Whisky<\/b><span style=\"font-weight: 400;\"> \u2014 distilled from cereals and matured in oak casks.
