Requirements to bottle olive oil: Legislation<\/h2>\n

The procedure to bottle olive oil<\/strong> follows a specific legislation<\/strong>, as well as some
\nparticular requirements based on whether the oil is bottled in-house or at the oil mill.
\nThe following requirements are necessary when the bottling is done in-house:
\n\uf0b7 VAT number and the various fiscal documents (shipping certificate and
\ninvoice)
\n\uf0b7 The health authorisation of the establishment to be applied for from the local
\nhealth authority
\n\uf0b7 The notice on commencement of business to be requested to the CAAT, either
\non paper through the form or online through the KANA platform, which has to
\nbe accompanied by a valid NINo
\n\uf0b7 The inspection report from the Animal and Plant Health Agency (APHA)
\nOn the other hand, when the oil is bottled at the mill, the establishment will have all
\nthe necessary authorisations and will issue:
\n\uf0b7 The packaging and labelling invoice
\n\uf0b7 The storage documents
\n\uf0b7 The Return Packaging form from a Deposit Account.<\/p>\n

\"Requirements<\/p>\n

Local oil bottling requirements<\/h2>\n

As for the local oil bottling requirements<\/strong>, each company must write its own HACCP
\nmanual on oil bottling.
\nThe manual must include:
\n\uf0b7 A descriptive part: this will contain information developed to monitor the
\nhygiene and healthiness of food sold to customers. It will contain a detailed
\ndescription of the product and its intended use. It will include possible hazards
\nassociated with the processing and handling of food, as well as the premises of
\nthe business, sanitary facilities, and storage areas. It will list the hygienic
\nstandards in place and the critical points in the manufacturing processes to
\nprotect the consumer.
\n\uf0b7 The self-control sheets: the person in charge must draw up flow charts and
\ndiagrams of the various food production stages together with a list of the
\ntreatments the food has undergone, from processing to sale.<\/p>\n

\"Requirements<\/p>\n

The APHA inspection<\/h3>\n

The results of the inspection are received via email or letter. Should the mill owner
\nwant another inspection, they can do so within 14 days by asking APHA to test the
\nproduct again, for a fee of around \u00a3300 to \u00a3600. If the inspection fails at any stage
\nof olive oil production, including any re-test,\u00a0APHA\u00a0may issue a compliance notice,
\nwhich will list what is wrong, how to fix it and the time available to do so. Failure to
